Kids Vegetarian Lasagna

This vegetarian lasagna is simple to make and is┬ápopular with the kids. It’s packed with a range of nutritious vegetables as well as protein.

Kids Vegetarian Lasagna

Ingredients
1 onion, finely chopped
6 button mushrooms, chopped
1 yellow capsicum, diced
1 head of broccoli, chopped
2 carrots, grated
2 tablespoons olive oil
1/4 cup fresh parsley, finely chopped
1/3 cup tomato paste
2 x 410g tins chopped tomatoes
1 packet dried lasagna sheets
3 eggs
300ml milk
1/4 cup sour cream
100g grated cheese

Preheat oven to 180 degrees. Heat the olive oil in a large frying pan and add all of the vegetables (but not the parsley). Cover and cook over a medium heat for up to 10 minutes, stirring occasionally. Add the parsley, tomato paste and the tinned tomatoes. Place a layer of the lasagna sheets at the bottom of a greased rectangular baking dish. Cover with half of the vegetable mixture. Repeat. Finish with a layer of lasagna sheets. Break the eggs into a bowl with the milk and sour cream. Whisk to combine. Pour this mixture over the lasagna sheets. Top with grated cheese. Bake for 35 – 40 minutes.
